Mixed Berry Steel Cut Oatmeal

Serves 4
Cook Time:  30 minutes

INGREDIENTS
4 cups water
1 cup steel cut oats
1 cup berries (frozen or fresh)
2 tsp cinnamon, extra for serving
2 tsp vanilla extract
2 tbsp crushed pecans

STEPS

  1. Bring 4 cups of water to a boil on high heat
  2. Add 1 cup of frozen or fresh berries and bring water to boil again
  3. Add 1 cup steel cut oats and let boil again
  4. Reduce heat to medium low and let cook for 15 minutes, or until water becomes cloudy
  5. Add 2 tsp vanilla extract and 2 tsp cinnamon (throw in more of both if you want) and mix in
  6. Let cook for another 15 minutes, or until oatmeal has cooked to your preferred consistency. I like very little water in mine, so I let cook for an extra 5 minutes. Stir every few minutes to make sure oatmeal doesn’t stick to the bottom of the pan
  7. Top with crushed pecans and more cinnamon

Note: you can also make this with 3-minute Quaker Oats. The only difference is in the amount of time you let cook and in the ratio of water to oats
