Mixed Berry Steel Cut Oatmeal
Serves 4
Cook Time: 30 minutes
INGREDIENTS
4 cups water
1 cup steel cut oats
1 cup berries (frozen or fresh)
2 tsp cinnamon, extra for serving
2 tsp vanilla extract
2 tbsp crushed pecans
STEPS
- Bring 4 cups of water to a boil on high heat
- Add 1 cup of frozen or fresh berries and bring water to boil again
- Add 1 cup steel cut oats and let boil again
- Reduce heat to medium low and let cook for 15 minutes, or until water becomes cloudy
- Add 2 tsp vanilla extract and 2 tsp cinnamon (throw in more of both if you want) and mix in
- Let cook for another 15 minutes, or until oatmeal has cooked to your preferred consistency. I like very little water in mine, so I let cook for an extra 5 minutes. Stir every few minutes to make sure oatmeal doesn’t stick to the bottom of the pan
- Top with crushed pecans and more cinnamon
Note: you can also make this with 3-minute Quaker Oats. The only difference is in the amount of time you let cook and in the ratio of water to oats
