Healthy Apple-Pear Oat Muffins
Ingredients:
Dry:
3/4 cup oat flour
1/2 cup old fashioned oats
1/8 cup coconut flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
Wet:
½ cup unsweetened applesauce
1 cup grated apple and pear
1 cup apple and pear chopped into small cubes
⅓ cup avocado oil
½ cup honey
2 eggs
½ cup goat yogurt (or unsweetened greek yogurt)
2 teaspoons vanilla extract
Optional: 1/2 cup chopped walnuts or pecans (add a great crunch factor)
Instructions:
Preheat oven to 425F
In a large mixing bowl, mix together wet ingredients with a whisk.
In a separate, smaller mixing bowl, mix together dry ingredients with a large spoon.
Add dry ingredients to wet ingredients and mix together with whisk.
Fold in any add-ons.
Pour into muffin baking tin.
Bake at 425 for 15 minutes.
