Banana Almond Butter Oat Cookies
Makes 16 small cookies
Cook Time: 15 minutes
INGREDIENTS
2 ripe bananas
1 cup old fashioned oats
2 tablespoons almond butter
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 tablespoon unsweetened coconut flakes
(Other optional mix ins: chocolate chips)
STEPS
- Preheat oven to 350oF
- In a mixing bowl, mash the 2 bananas. Don't worry if there are still a few chunks at the end.
- Add almond butter and mix in with the bananas
- Add vanilla, cinnamon, and coconut flakes and mix in.
- Line baking sheet with parchment paper
- Using a small ice cream scooper or a regular spoon, create small balls out of the "dough" and place on baking sheet. Use your hands to smoothen out the balls to look more like cookies.
- Place in oven and let bake for 10-15 minutes. When you take them out, the oats should look golden, but the banana will make the cookie look undercooked. That's what you want!
