Healthy Homemade Granola

INGREDIENTS
2 cups old-fashioned oats
1 cup chopped pecans
1/2 cup pepitas (or any seed)
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup olive oil
1 tablespoon honey (or maple syrup)
1 teaspoon vanilla extract

STEPS

  1. Preheat oven to 350oF and line baking sheet with parchment paper. In a mixing bowl, combine dry ingredients - oats, nuts, seeds, salt and cinnamon.
  2. Pour in the wet ingredients - oil, honey and vanilla. Mix well, until dry ingredients are lightly coated. Pour the granola onto the baking sheet and spread evenly using your hands or a spoon. Bake until golden, about 20 minutes, stirring halfway. The granola will continue to crisp as it cools.
  3. Let the granola cool completely, undisturbed, before breaking it into pieces. Store in a ziploc or airtight container at room temperature for 1 to 2 weeks, or in the fridge for up to 3 months.
