Healthy Homemade Granola
INGREDIENTS
2 cups old-fashioned oats
1 cup chopped pecans
1/2 cup pepitas (or any seed)
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup olive oil
1 tablespoon honey (or maple syrup)
1 teaspoon vanilla extract
STEPS
- Preheat oven to 350oF and line baking sheet with parchment paper. In a mixing bowl, combine dry ingredients - oats, nuts, seeds, salt and cinnamon.
- Pour in the wet ingredients - oil, honey and vanilla. Mix well, until dry ingredients are lightly coated. Pour the granola onto the baking sheet and spread evenly using your hands or a spoon. Bake until golden, about 20 minutes, stirring halfway. The granola will continue to crisp as it cools.
- Let the granola cool completely, undisturbed, before breaking it into pieces. Store in a ziploc or airtight container at room temperature for 1 to 2 weeks, or in the fridge for up to 3 months.
