Coconut Banana Chocolate Chip Cookies

INGREDIENTS
1 cup coconut flour
1 tsp baking soda
pinch of salt
4 eggs
2 tsp of vanilla extract
2 tbsp of honey
1/8 cup coconut oil, melted
3 bananas, mashed
3/4 cup of chocolate chips
STEPS
- Preheat oven to 350oF and line baking sheet with parchment paper
- In a medium sized mixing bowl, combine all dry ingredients (coconut flour, baking soda, salt) and stir to combine
- In a separate bowl, crack 4 eggs and whisk until eggs are well beaten. Add remaining wet ingredients (mashed bananas, vanilla extract, honey, and melted coconut oil) and whisk to combine.
- Add dry ingredients to wet ingredients and mix together with a spoon.
- Once all the dry ingredients are mixed in, add the chocolate chips and mix again with a spoon
- Using a spoon or ice cream scooper, create little balls and place on baking sheet. The cookies won't grow that much so you don't need to leave too much space between them. Once you've gone through all the dough, use a small spoon to flatten out the top of the balls and take on the cookie shape you want.
- Place in the oven for 13 minutes. When ready, let cool for 5 minutes before digging in!
