Coconut Brownie Loaf
This recipe can be used to make a loaf cake or brownies. The only thing that changes is the shape of the baking dish you use.
INGREDIENTS
1/2 cup coconut flour
1/2 cup PB2 + water mixed
1 ripe banana, mashed
5 strawberries
2 small boxes of blueberries
3 eggs, beaten
1 tsp of baking soda
1 tbsp pure vanilla extract
1 tsp cinnamon
1 cup of chocolate chips (leave 1/4 behind to sprinkle on at the end)
STEPS
- Preheat oven to 350F
- Place strawberries and blueberries in food processor and pulse until they liquify
- Combine in a medium mixing bowl with other wet ingredients (eggs, PB2, water, banana, vanilla extract) and whisk together
- In a separate bowl, combine dry ingredients (coconut flour, baking soda, and cinnamon) and mix together with a large spoon
- Add dry ingredients and wet ingredients and mix together with spoon or whisk.
- Add 3/4 cup of the chocolate chips and fold in
- Pour mixture into baking dish and place in the oven. Let bake for 50-55 minutes.
- When finished, let cool for 15 minutes before digging in
*Note: If serving yourself a slice later on, warm up in the microwave for 20 seconds first.
