Roasted Broccoli Heaven

INGREDIENTS
1 large head of broccoli, or 2 smaller heads, chopped into small florets
½ cup slivered almonds
1 large red onion, sliced into thin wedges
⅓ cup dried cranberries
Apple cider vinegar dressing
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard
1/2 tablespoon honey
1 tsp sesame oil
1/4 tsp garlic powder
1/4 tsp salt

STEPS

  1. Preheat oven to 400F.
  2. Chop broccoli into florets and slice onion into thin wedges.
  3. Transfer broccoli to a baking dish and toss with a little bit of olive oil, salt and pepper. Place in oven and let roast for 25 minutes.
  4. In the meantime, warm a skillet on medium heat. Spray with coconut oil cooking spray or olive oil and add sliced onions. Cook, stirring every few minutes, until onions soften. Reduce heat to medium low and continue to let cook until broccoli is done roasting. 
  5. Add sliced almonds to another skillet (no oil needed). Let toast for 3-5 minutes, stirring occasionally to avoid burning. Turn off heat when slices become golden and set aside.
  6. Prepare dressing by mixing all ingredients together with a small whisk or spoon. 
  7. When everything is ready, assemble in a bowl and add dried cranberries. Pour dressing and serve!
