Fiber+Protein Matcha Pancakes
Serves 1-2 (depending on how hungry you are)
Total Prep/Cook Time: 15 minutes
INGREDIENTS
4 GG Fiber crackers
1/2 banana, mashed
4 egg whites
1 packet of Panatea matcha powder (about 1 tsp)
1/2 tsp cinnamon
1 tsp vanilla
1 tsp baking powder
Splash of apple cider vinegar
To serve: chocolate PB2 and cooked berries*
STEPS
- Place GG crackers in food processor and pulse until they turn into a crumbs
- Add remaining ingredients to food processor and pulse again until everything is well mixed.
- Warm skillet over medium heat and spray with coconut oil cooking spray. Pour pancake mix onto skillet (pancake size is based on personal preference). Let cook for 3 minutes on each side (flip in between).
- *To cook berries, warm another skillet over medium heat and spray with coconut oil. Add berries with a splash of vanilla and a sprinkle of cinnamon. Let cook for 15 minutes, or until the berries become gooey, like a jam. So good :)
