Fiber+Protein Matcha Pancakes

Serves 1-2 (depending on how hungry you are)
Total Prep/Cook Time: 15 minutes

INGREDIENTS
4 GG Fiber crackers
1/2 banana, mashed
4 egg whites
1 packet of Panatea matcha powder (about 1 tsp)
1/2 tsp cinnamon
1 tsp vanilla
1 tsp baking powder
Splash of apple cider vinegar
To serve: chocolate PB2 and cooked berries*

STEPS

  1. Place GG crackers in food processor and pulse until they turn into a crumbs
  2. Add remaining ingredients to food processor and pulse again until everything is well mixed. 
  3. Warm skillet over medium heat and spray with coconut oil cooking spray. Pour pancake mix onto skillet (pancake size is based on personal preference). Let cook for 3 minutes on each side (flip in between). 
  4. *To cook berries, warm another skillet over medium heat and spray with coconut oil. Add berries with a splash of vanilla and a sprinkle of cinnamon. Let cook for 15 minutes, or until the berries become gooey, like a jam. So good :)
