Roasted Mushrooms with Toasted Pine Nuts and Parmesan Cheese
Serves 4 (as a side portion)
Prep and Cook Time: 1 hour
INGREDIENTS
1 1/2 pounds of mushrooms (cremini or any type of mushroom you have), rinsed and quarterered
1 tablespoon olive oil
1/8 cup of pine nuts
1 teaspoon lemon juice
1/2 cup grated Parmesan cheese
STEPS
- Preheat oven to 450F
- Add mushrooms to a large bowl and fill with room temp water and 3 teaspoons of salt. Use a plate to apply pressure to the mushrooms to submerge into the water. Leave for 10 minutes.
- Drain and dry mushrooms with paper towels. Transfer to an aluminum baking sheet and add olive oil (just enough to lightly coat the mushrooms). Roast for 45 minutes, or until all of the water released by the mushrooms while cooking evaporates.
- In the meantime, add pine nuts to a skillet and cook on medium high heat for 5-10 minutes, stirring frequently to prevent from burning. Once toasted to your liking, set aside.
- Transfer roasted mushrooms to a mixing bowl and mix in lemon juice and pine nuts. Top with parmesan when ready to serve!
